Dietary needs

Murray State Dining is excited to welcome a registered dietitian to assist students wanting to make healthier decisions while dining on campus.

Ashlee Clay is a registered dietitian from Birmingham, Alabama. She moved to Murray with her husband who is the Strength and Conditioning Coach for football here at Murray State. She has years of experience helping college students achieve their nutritional goals at both the University of Alabama and Samford University. We want all of our students to be able to enjoy the same experience at Winslow, including the camaraderie of sitting down to a meal with friends. That means Dining Services is fully prepared and able to accommodate most if not all special dietary needs.

If you have any special dietary needs: 

  • Schedule an appointment with Ken Ashlock (270-809-6888; 423 Wells Hall) in Student Disability Services and bring documentation from a medical professional that supports your request/need for a special diet.
  • Contact the management staff at Winslow Dining Hall (270-809-3398) to discuss your specific dietary needs. You may also be asked to meet with a nutrition intern who can provide additional assistance and information.

Food allergies

Murray State University Dining Services makes every attempt to identify ingredients that may cause allergic reactions for those with food allergies.

Every effort is made to instruct our food production staff on the severity of food allergies. Additionally, we label items with possible allergen-containing ingredients. However, there is always a risk of contamination. There is also a possibility that manufacturers of the commercial foods we use could change the formulation or substitute at any time and without notice. Customers concerned with food allergies need to be aware of this risk. Also, please be aware that our bakery area is not a nut free bakery. We cannot guarantee the absence of cross contamination with our baked goods.

Murray State University Dining Services will not assume any liability for adverse reactions to foods consumed or items one may come in contact with while eating at any University establishments. Students with food allergies are encouraged to contact Dining Services at 270-809-3398 or the registered dietitian  for additional information and/or support.

Notice to Customers: Because a food manufacturer may change the ingredients and nutritional content of its food products without our knowledge, we cannot guarantee the accuracy of the nutritional value and contents of each food item. For more detailed information on a food product, please contact the unit manager or the food manufacturer directly.

To help you make healthy food choices at Murray State, nutrition information is displayed for most dishes in Winslow beside the Salt & Pepper line and on various line cards in the Thoroughbred Room. You can also find additional information in the binders located at the front of the Thoroughbred Room.

Healthy options

  • Steamed vegetables are served daily at Salt & Pepper.
  • A lean meat is always available during lunch and dinner at Salt & Pepper.
  • The Mongolian grill allows you to customize your dinner meal by selecting from a wide array of fresh vegetables, beans and brown rice. Have your meal prepared with or without meat.
  • Our bountiful salad bar is loaded with fresh vegetables and beans. Olive oil and balsamic vinegar are available in addition to regular and low-fat/fat-free dressings.
  • Deli sandwiches are made-to-order with healthy choices like wheat or grain bread, turkey and vegetables.
  • Whole grain side salads are available daily (except Sundays).
  • Fresh fruit is always available.
  • We use only olive oil and canola oil in our cooking and are trans-fat-free in our food preparation.
  • Yogurt and low-fat cottage cheese are available every day at breakfast.

Vegetarian options

  • Daily vegetarian entrées available on the Hot Line
  • Daily steamed vegetables on the Hot Line
